STIR-FRIED DUNGENEES CRAB with Sweet Chili Sauce.

2-3 Large Dungenees Crab
¼ Cup Oil
1 Tablespoon Minced Garlic and 1 tablespoon Minced Ginger
2 Red Chili Pepper chopped
½-1 Jalapeno Pepper chopped
1 Cup of Water
1/3 Cup Dark Brown Sugar
¼ Cup Soy Sauce
½ Lemon Juice, (Slice up the other half)
1/8-1/4 Cup Vinegar (plain)
1 Tab Corn Starch mix with two tab of Cold Water

Please Note: You may need to purchase Crab Cracker(s).

 

1. Start boiling water, Lemon slices, and little salt together in a large pot.

2. Meanwhile, clean/rinse off and cut each crab into 4 sections.

3. Add crab to boiling water and cover. bring to a boil for about 10 minutes.

4. Remove crab from water and drain.

5. Using a crab cracker, crack the legs and claws a little bit (Try not to break in half and expose the meat too much).

6. Heat up large frying pan on medium fire and add Oil, Chili Pepper, Garlic/Ginger mixture. Stir fry for 1 minute, then remove from the oil and set aside.

7. Add Crab to frying pan and stir fry them for 2-3 minutes. (do not let pan burn). Remove the Crab and set aside.

8. Add Water, Sugar, Soy Sauce, Lemon Juice, Vinegar, Chili/Garlic mix and stir for 2 minutes. (taste the sauce, it should be sweet, tangy, little peppery. (Add some Sugar, Jalapeno if needed).

9. Stir in Cornstarch/Water mixture and let the sauce thicken (about 2-3 minutes).

10. Return Crab to pan, stir and coat the Crab in sauce. Cover and let cook for about 5 minutes on a medium fire(stir 1-2 times).
